- 2 cups cooked chicken, shredded or chopped
- 1 cup carrots, diced
- 1 cup peas, frozen or fresh
- 1 cup celery, diced
- 1 medium onion, diced
- 1/3 cup butter
- 1/3 cup flour
- 1 ¾ cups chicken broth
- 2/3 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- 1 pre-made pie crust or homemade crust
Instructions
- Cook the vegetables: In a large skillet, melt the butter over medium heat. Add onions and sauté for 3-4 minutes. Then add carrots and celery, cooking for an additional 5 minutes. Add peas and cook until heated through.
- Make the sauce: Sprinkle flour over vegetables and cook for 2-3 minutes. Gradually add chicken broth and milk, stirring constantly until thickened. Season with salt, pepper, and thyme.
- Combine with chicken: Stir in the cooked chicken and mix until combined. Add more milk or broth if needed. Allow the filling to cool slightly.
- Assemble the pie: Preheat oven to 425°F (220°C). Roll out your pie crust and place the bottom crust in a pie dish. Pour the filling into the crust and top with another layer of crust. Seal the edges and cut slits on top. Brush with egg wash for a golden finish.
- Bake: Bake for 30-35 minutes until the crust is golden brown and the filling is bubbling. Let it cool for 10-15 minutes before serving.
Notes
- Feel free to substitute chicken with turkey or vegetables like mushrooms for a vegetarian version.
- You can freeze the unbaked pie and cook it directly from the freezer by adding an extra 10-15 minutes of baking time.
- Chill the dough before rolling it out for a flakier crust.
