Description
Chicken quesadillas are a quick and versatile dish featuring tender chicken, melted cheese, and flavorful fillings inside a warm tortilla.

- 2 cups cooked chicken, chopped
- 1 ½ cups shredded cheese (Cheddar, Monterey Jack, or Pepper Jack)
- 4 large flour tortillas
- ½ cup bell peppers, diced (optional)
- ½ cup onion, diced (optional)
- 1 teaspoon taco seasoning (optional)
- 2 tablespoons olive oil or cooking spray
- Salt and pepper to taste
Instructions
- In a medium bowl, mix the chopped cooked chicken with salt, pepper, and taco seasoning. Add bell peppers and onions if using.
- Heat a large skillet over medium heat and add 1 tablespoon olive oil or use cooking spray.
- Place one tortilla in the skillet. On half the tortilla, sprinkle about ½ cup cheese, add chicken filling, and top with another ½ cup cheese. Fold the tortilla in half.
- Cook for 3–4 minutes until the bottom is golden brown. Flip and cook the other side for another 3–4 minutes until golden and the cheese is melted.
- Remove from skillet and repeat with remaining ingredients.
- Let the quesadillas cool slightly, then slice into wedges and serve warm with salsa, guacamole, or sour cream.
Notes
- Do not overfill the quesadilla to prevent it from falling apart while flipping.
- Use a non-stick skillet or lightly grease your pan for best results.
- Drain any excess liquid from vegetables to avoid sogginess.
- Use freshly shredded cheese for better melting and texture.
