Description
Chicken Scallopini is a quick and flavorful Italian-inspired dish featuring tender chicken, a rich tomato wine sauce, and spaghetti.

- 1 packet Brown Gravy Mix
- 2 small boneless skinless chicken breasts
- Salt and pepper to taste
- 3 tablespoons flour
- 1–2 tablespoons olive oil
- 1 tablespoon salted butter
- 1 small yellow onion, sliced
- 3 cloves garlic, minced
- 1 cup dry white wine or chicken broth
- 8 oz tomato sauce
- 3/4 lb thin spaghetti
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon parsley
- 1/2 teaspoon mustard powder
- 1/4 teaspoon salt
Instructions
- In a measuring cup, combine brown gravy mix with 1 cup of cold water. Stir in tomato sauce, Italian seasoning, parsley, mustard powder, and salt. Set aside.
- Cube chicken breasts evenly, season with salt and pepper, then coat with flour.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden and cooked through. Remove from skillet and set aside.
- Turn off heat and deglaze skillet with 1/4 cup white wine or chicken broth, scraping up brown bits. Add butter and sliced onions. Cook over medium heat for 20 minutes until soft.
- Add minced garlic and cook for 1 minute. Pour in remaining wine or broth and simmer for 5 minutes to reduce.
- Add gravy mixture to skillet, bring to a boil, then reduce heat and simmer for 30 seconds. Return chicken to skillet and coat in sauce.
- Meanwhile, cook spaghetti in salted water until al dente. Drain and set aside.
- Add cooked spaghetti to the skillet and toss with the chicken and sauce. Garnish with fresh parsley and serve.
Notes
- Substitute turkey for chicken if preferred.
- Use broth instead of wine for a non-alcoholic version.
- Add vegetables like bell peppers or mushrooms for extra nutrition.
- To freeze, store sauce and chicken separately from pasta.
- Reheat gently on stovetop or in microwave in intervals.
