Description

Chicken Scallopini is a quick and flavorful Italian-inspired dish featuring tender chicken, a rich tomato wine sauce, and spaghetti.


Ingredients

  • 1 packet Brown Gravy Mix
  • 2 small boneless skinless chicken breasts
  • Salt and pepper to taste
  • 3 tablespoons flour
  • 12 tablespoons olive oil
  • 1 tablespoon salted butter
  • 1 small yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 cup dry white wine or chicken broth
  • 8 oz tomato sauce
  • 3/4 lb thin spaghetti
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon parsley
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon salt

Instructions

  1. In a measuring cup, combine brown gravy mix with 1 cup of cold water. Stir in tomato sauce, Italian seasoning, parsley, mustard powder, and salt. Set aside.
  2. Cube chicken breasts evenly, season with salt and pepper, then coat with flour.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden and cooked through. Remove from skillet and set aside.
  4. Turn off heat and deglaze skillet with 1/4 cup white wine or chicken broth, scraping up brown bits. Add butter and sliced onions. Cook over medium heat for 20 minutes until soft.
  5. Add minced garlic and cook for 1 minute. Pour in remaining wine or broth and simmer for 5 minutes to reduce.
  6. Add gravy mixture to skillet, bring to a boil, then reduce heat and simmer for 30 seconds. Return chicken to skillet and coat in sauce.
  7. Meanwhile, cook spaghetti in salted water until al dente. Drain and set aside.
  8. Add cooked spaghetti to the skillet and toss with the chicken and sauce. Garnish with fresh parsley and serve.

Notes

  • Substitute turkey for chicken if preferred.
  • Use broth instead of wine for a non-alcoholic version.
  • Add vegetables like bell peppers or mushrooms for extra nutrition.
  • To freeze, store sauce and chicken separately from pasta.
  • Reheat gently on stovetop or in microwave in intervals.
