Description

Chicken Shawarma is a delicious Middle Eastern dish featuring marinated chicken thigh fillets cooked to perfection with aromatic spices, served with yogurt sauce and fresh vegetables in a wrap or platter.


Ingredients

  • 1 kg chicken thigh fillets, skinless and boneless
  • 1 large garlic clove, minced
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp ground cardamom
  • 1 tsp ground cayenne pepper
  • 2 tsp smoked paprika
  • 2 tsp salt
  • Black pepper, to taste
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 cup Greek yogurt
  • 1 clove garlic, crushed
  • 1 tsp cumin
  • Squeeze of lemon juice
  • Salt and pepper, to taste
  • 45 flatbreads
  • Sliced lettuce
  • Tomato slices
  • Red onion, finely sliced
  • Cheese, shredded (optional)
  • Hot sauce, optional

Instructions

  1. Marinate the chicken: Combine garlic, ground coriander, cumin, cardamom, cayenne pepper, smoked paprika, salt, black pepper, lemon juice, and olive oil in a ziplock bag. Add chicken and massage to coat. Let marinate for at least 3 hours or up to 24 hours.
  2. Prepare the yogurt sauce: Mix Greek yogurt, crushed garlic, cumin, lemon juice, salt, and pepper in a bowl. Refrigerate until ready to serve.
  3. Cook the chicken: Preheat grill or stovetop to medium-high heat. Grill the marinated chicken for 4-5 minutes per side until fully cooked (internal temperature of 75°C/165°F). Rest for 5 minutes before slicing.
  4. Assemble Shawarma: Slice the cooked chicken into strips. Spread yogurt sauce on flatbreads, top with lettuce, tomato, red onion, and chicken. Add optional cheese or hot sauce. Roll up the flatbread to form wraps and serve.

Notes

  • For best flavor, marinate the chicken for 24 hours if possible.
  • Don’t overcrowd the pan or grill when cooking the chicken to achieve the perfect char.
  • Fresh herbs like parsley or cilantro can be added for extra flavor.
  • Feel free to substitute chicken thighs with chicken breasts or even lamb or beef for different variations.
