Description
Chicken spaghetti is a hearty, comforting dish made with tender chicken, pasta, and a creamy sauce. It’s perfect for weeknight dinners or potlucks.

- 2 cups cooked chicken, shredded or diced
- 8 ounces of spaghetti
- 1 can (10.5 ounces) cream of mushroom soup
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 1 bell pepper, chopped (any color)
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- Boil a large pot of salted water over high heat. Add spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving a bit of pasta water.
- In a large skillet, heat olive oil over medium heat. Add chopped onion, bell pepper, and minced garlic. Sauté for 5 minutes until vegetables are soft and onions are translucent.
- Add shredded chicken to the skillet, stirring to combine with the vegetables. Then, add cream of mushroom soup, cream of chicken soup, and chicken broth. Stir until fully mixed.
- Stir in the cooked spaghetti and toss to coat the noodles in the creamy sauce. If the sauce is too thick, add some reserved pasta water to reach the desired consistency.
- Season with salt, pepper, and paprika. Stir in additional grated cheese if desired. Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish and top with shredded cheddar cheese.
- Bake for 20-25 minutes or until cheese is melted and bubbly. Let the dish cool for a few minutes before serving. Garnish with chopped fresh parsley.
Notes
- For a healthier version, swap whole wheat spaghetti and use low-fat soups.
- Pre-cooked rotisserie chicken can save time.
- If you don’t have cream of mushroom soup, use cream of celery or homemade white sauce.
- If the dish is too thick, add reserved pasta water to adjust the consistency.
