- 1 pound boneless skinless chicken breasts, cubed

- Pepper to taste
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 yellow onion, sliced
- 2 tbsp sesame oil, divided
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp soy sauce
- 1 ½ tbsp rice vinegar
- 1 tbsp cornstarch
- 1 tbsp coconut sugar
- 1 tbsp honey
- 2 tsp freshly ground black pepper
- 1 tsp crushed red chili pepper flakes
- 1 tsp sesame seeds for garnish
- 1 tbsp green onion for garnish
Instructions
- Cut onion and bell peppers into strips; cube chicken and season with salt and pepper.
- Heat 1 tbsp sesame oil in a skillet or wok over medium-high heat. Cook chicken until golden and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add remaining sesame oil, minced garlic, and ginger. Sauté until fragrant, about 30 seconds.
- Add bell peppers and onion to skillet; cook 5-10 minutes until softened but still crisp.
- Return chicken to skillet and stir for 2-3 minutes to combine flavors.
- In a small bowl, mix soy sauce, rice vinegar, cornstarch, coconut sugar, honey, black pepper, and chili flakes until sugar dissolves.
- Pour sauce over chicken and vegetables; cook and stir until sauce thickens and coats all ingredients, about 2-3 minutes.
- Turn off heat and garnish with sesame seeds and chopped green onions. Serve immediately.
Notes
- Do not overcrowd the skillet; cook in batches if needed to avoid steaming.
- Brush tortillas lightly with oil before cooking for extra crispiness (if making quesadillas).
- Marinate chicken in soy sauce and ginger for 30 minutes for deeper flavor.
- Substitute chicken with tofu or shrimp for vegetarian or seafood options.
- Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
