Description

Ingredients

  • 1 ripe avocado, diced
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 cup mixed greens (spinach or arugula)
  • Fresh herbs (cilantro or parsley), chopped
  • 2 tablespoons olive oil

Instructions

  1. Prepare the chickpeas by draining and rinsing them under cold water.
