Description
A traditional Christmas fruitcake filled with dried fruits and nuts.
Ingredients

- 2 cups mixed dried fruits
- 1 cup chopped nuts
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
- 1/2 cup orange juice
- 1/4 cup rum
Instructions
- Preheat the oven to 300°F (150°C).
- Grease and line a cake pan with parchment paper.
- In a bowl, mix dried fruits and nuts with 1 tablespoon of flour.
- In another bowl, cream butter and sugar until fluffy.
- Beat in eggs one at a time.
- Mix in orange juice and rum.
- Combine flour, baking powder, cinnamon, and nutmeg in a separate bowl.
- Gradually add dry ingredients to the wet mixture.
- Fold in the fruit and nut mixture.
- Pour batter into the prepared cake pan.
- Bake for 1.5 to 2 hours or until a toothpick comes out clean.
- Let the cake cool before serving.
Notes
- Store cake in an airtight container.
- Fruitcake improves with age.
- Can be decorated with icing or fruits.
