Instructions
- In a medium saucepan, bring water, butter, salt, and sugar to a rolling boil over medium heat.
- Reduce heat to low, add flour, and stir continuously until dough forms a ball and pulls away from the pan.
- Remove from heat and let dough cool for 5-10 minutes.
- Beat in eggs one at a time until smooth, then add vanilla extract.
- Heat vegetable oil in a deep pot to 350°F (175°C).
- Drop tablespoon-sized dough rounds into hot oil in batches; fry until golden brown, about 3-4 minutes.
- Remove churro bites with a slotted spoon and drain on paper towels.
- While still warm, toss churro bites in a mixture of granulated sugar and ground cinnamon until evenly coated.
- Serve warm, optionally with dipping sauces like chocolate or dulce de leche.
