Ingredients
- Long-grain white rice: 1 cup (about 200 grams)
- Water: 2 cups (about 480 milliliters)
- Fresh cilantro: 1/2 cup, finely chopped (about 15 grams)
- Lime juice: 2 tablespoons (about 30 milliliters)
- Lime zest: 1 teaspoon (about 5 grams)
- Garlic: 2 cloves, minced
- Olive oil: 1 tablespoon (about 15 milliliters)
- Salt: 1/2 teaspoon (about 3 grams)
- Black pepper: 1/4 teaspoon (about 1 gram)
Instructions
- Rinse the rice under cold running water until the water runs clear.
- In a medium saucepan, combine the rinsed rice with 2 cups of water and 1/2 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes.
- In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- After the rice has finished cooking, let it sit covered for 5 minutes. Fluff the rice with a fork.
- In a large mixing bowl, combine the fluffed rice with the sautéed garlic and olive oil mixture, chopped cilantro, lime juice, and lime zest. Stir gently to mix.
