Ingredients

- 4 chicken breasts
- 1 cup coconut milk
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup fresh cilantro, chopped
Instructions
- In a bowl, mix coconut milk, lime juice, garlic, honey, salt, and pepper.
- Place chicken breasts in a dish and pour the marinade over them. Let it marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium heat.
- Remove chicken from marinade and cook each breast for 6-7 minutes on each side until cooked through.
- Garnish with fresh cilantro before serving.
Notes
- Serve with rice or salad.
- Adjust lime juice to taste.
- Can use chicken thighs instead of breasts.
