Description

Coconut shrimp with pineapple dip is a delightful dish that combines the sweetness of coconut with the savory crunch of fried shrimp, served with a creamy pineapple dip.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Vegetable oil (for frying)

For the Pineapple Dip:

  • 1 cup fresh pineapple, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of coconut, panko, salt, pepper, garlic powder, and paprika.
  3. Dip each shrimp in flour, then in eggs, and finally coat with the coconut mixture.
  4. Heat vegetable oil in a skillet over medium-high heat and fry the shrimp in batches for 2-3 minutes on each side until golden brown.
  5. In a blender, combine pineapple, mayonnaise, honey, lime juice, and salt to make the dip.
  6. Serve the shrimp warm with the pineapple dip on the side.

Notes

  • Use large, fresh shrimp for the best flavor.
  • Ensure the oil is hot enough before frying to achieve a crispy texture.
  • Consider adding cayenne pepper to the coconut mixture for extra flavor.
