Ingredients

- 1 cup cottage cheese
- 2 cups cooked chicken, shredded
- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt to taste
- Pepper to taste
- 4 slices whole grain bread
- Leafy greens for serving
Instructions
- In a bowl, mix cottage cheese, chicken, celery, red onion, mayonnaise, and mustard.
- Season with salt and pepper.
- Spread the mixture evenly on two slices of bread.
- Add leafy greens on top.
- Top with remaining bread slices.
- Cut the sandwich in half and serve.
