- 6 large eggs
- 1 cup cottage cheese
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/4 cup onion, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, whisk together eggs, cottage cheese, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add onion and bell pepper, sauté until soft.
- Add spinach and cook until wilted.
- Pour the egg mixture into the skillet, stir gently to combine.
- Cook for 3-4 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until fully set.
- Remove from oven, let it cool slightly, then cut into wedges.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This frittata can be served warm or at room temperature.
