Description

Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together eggs, cottage cheese, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add onion and bell pepper, sauté until soft.
  5. Add spinach and cook until wilted.
  6. Pour the egg mixture into the skillet, stir gently to combine.
  7. Cook for 3-4 minutes until the edges start to set.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes until fully set.
  9. Remove from oven, let it cool slightly, then cut into wedges.
