Description
Cowboy caviar is a refreshing bean salad with a kick.
Ingredients

- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 1 jalapeño, seeded and diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon cumin
- Salt to taste
Instructions
- In a large bowl, combine black beans, corn, bell peppers, red onion, jalapeño, cherry tomatoes, and cilantro.
- In a separate bowl, whisk together olive oil, red wine vinegar, cumin, and salt.
- Pour the dressing over the bean mixture.
- Toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve with tortilla chips.
- Store leftovers in the fridge for up to 3 days.
- Adjust jalapeño for desired spice level.
