Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 1 jalapeño, seeded and diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. In a large bowl, combine black beans, corn, bell peppers, red onion, jalapeño, cherry tomatoes, and cilantro.
  2. In a separate bowl, whisk together olive oil, red wine vinegar, cumin, and salt.
  3. Pour the dressing over the bean mixture.
  4. Toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
