- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 box cornbread mix
- 1 egg
- 1/3 cup milk
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, brown the ground beef over medium heat.
- Add black beans, corn, diced tomatoes, and taco seasoning. Stir well and cook for 5 minutes.
- In a separate bowl, mix cornbread mix, egg, and milk until combined.
- In a greased baking dish, layer the beef mixture, then pour the cornbread batter on top.
- Sprinkle cheese on top of the cornbread mixture.
- Bake for 25-30 minutes or until the cornbread is golden brown.
Notes
- Serve with sour cream and salsa.
- Can substitute ground turkey for beef.
- Store leftovers in the refrigerator for up to 3 days.
