Description

A hearty cowboy cornbread casserole that combines savory ingredients for a delicious meal.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 box cornbread mix
  • 1 egg
  • 1/3 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Add black beans, corn, diced tomatoes, and taco seasoning. Stir well and cook for 5 minutes.
  4. In a separate bowl, mix cornbread mix, egg, and milk until combined.
  5. In a greased baking dish, layer the beef mixture, then pour the cornbread batter on top.
  6. Sprinkle cheese on top of the cornbread mixture.
  7. Bake for 25-30 minutes or until the cornbread is golden brown.

Notes
