A hearty and flavorful potato casserole with a cowboy twist.
Ingredients

- 6 cups of diced potatoes
- 1 lb ground beef
- 1 cup diced onion
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 can cream of mushroom soup
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chopped green onions
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef with diced onion.
- In a large bowl, mix together the cooked beef, diced potatoes, sour cream, cream of mushroom soup, garlic powder, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheddar cheese.
- Bake for 45 minutes or until the potatoes are tender.
- Remove from the oven and sprinkle with chopped green onions.
Notes
- Feel free to add your favorite vegetables.
- Can be made ahead and stored in the refrigerator.
- Great for potlucks and gatherings.
