Description
A flavorful side dish combining cranberries and orange with rice.
Ingredients

- 1 cup long-grain rice
- 2 cups vegetable broth
- 1/2 cup dried cranberries
- 1/2 cup orange juice
- 1 small onion, diced
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a pot over medium heat.
- Add diced onion and sauté until translucent.
- Stir in the rice and cook for 2 minutes.
- Add vegetable broth, orange juice, cranberries, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes or until rice is cooked.
- Remove from heat and let it sit for 5 minutes.
- Fluff rice with a fork and stir in parsley before serving.
Notes
- Use fresh cranberries for a tart flavor.
- Adjust seasoning to taste.
- Can be made ahead and reheated.
