- 8 ounces of fettuccine or penne pasta
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve 1 cup of pasta water and drain the pasta.
- In the same pot, heat olive oil over medium-high heat. Add the chicken, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove the chicken and set aside.
- Lower the heat to medium, add garlic to the pot, and sauté for 1 minute. Pour in the heavy cream and chicken broth, bring to a simmer, then add Italian seasoning, salt, and pepper. Cook for 3-5 minutes to thicken the sauce.
- Return the chicken to the pot and add grated Parmesan cheese, stirring to combine. If the sauce is too thick, add reserved pasta water to achieve the desired consistency.
- Add the cooked pasta to the pot and toss to coat with the creamy sauce. Serve immediately, garnished with parsley.

- For a lighter version, substitute heavy cream with half-and-half or whole milk.
- Use gluten-free pasta or zucchini noodles for a low-carb alternative.
