- 8 oz (225 g) spaghetti or fettuccine pasta
- 1 lb (450 g) large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley, for garnish
- Red pepper flakes (optional, for a bit of heat)
Instructions
- Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta water, drain and set aside.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
- In the same skillet, lower heat to medium, add remaining butter and minced garlic. Sauté for 1 minute, then add heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth. Add reserved pasta water if sauce is too thick.
- Add cooked shrimp and pasta to skillet, toss until well coated. Adjust seasoning with salt, pepper, or red pepper flakes as desired. Garnish with chopped parsley and serve immediately.
Notes
- For a lighter version, use olive oil instead of butter.
- Substitute shrimp with scallops or chicken for a different protein.
- For dairy-free, replace heavy cream with coconut cream and Parmesan with nutritional yeast.
