  • 1 pound Italian sausage (bulk, not in casings)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by bringing a large pot of salted water to boil. Add the fettuccine pasta and cook until al dente, about 10 to 12 minutes. Drain, reserving 1/4 cup of pasta water.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it apart as it cooks, about 7 to 10 minutes.
  3. Add minced garlic to the skillet and sauté for about 1 minute, making sure not to burn it.
  4. Pour in heavy cream and chicken broth, then stir to combine. Bring to a gentle simmer for 3 to 5 minutes to thicken the sauce slightly.
  5. Add the cooked fettuccine to the skillet and toss to coat, adding reserved pasta water as needed to reach desired consistency.
  6. Sprinkle grated Parmesan cheese into the skillet and stir until melted. Season with salt and pepper, then serve garnished with parsley.

Notes

For a lighter option, use half-and-half instead of heavy cream. You can substitute chicken broth with vegetable broth for a vegetarian version.
