- 12 ounces fettuccine pasta
- 1 pound Italian sausage (bulk, not in casings)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Begin by bringing a large pot of salted water to boil. Add the fettuccine pasta and cook until al dente, about 10 to 12 minutes. Drain, reserving 1/4 cup of pasta water.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it apart as it cooks, about 7 to 10 minutes.
- Add minced garlic to the skillet and sauté for about 1 minute, making sure not to burn it.
- Pour in heavy cream and chicken broth, then stir to combine. Bring to a gentle simmer for 3 to 5 minutes to thicken the sauce slightly.
- Add the cooked fettuccine to the skillet and toss to coat, adding reserved pasta water as needed to reach desired consistency.
- Sprinkle grated Parmesan cheese into the skillet and stir until melted. Season with salt and pepper, then serve garnished with parsley.
Notes
For a lighter option, use half-and-half instead of heavy cream. You can substitute chicken broth with vegetable broth for a vegetarian version.
