Description

Ingredients

  • 12 ounces pasta (penne, fettuccine, or your preferred type)
  • 1 pound Italian sausage (mild or spicy)
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook until browned, breaking it apart as it cooks (about 5-7 minutes). Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
  3. In the same skillet, sauté the chopped onion and garlic for 2-3 minutes, until translucent and fragrant.
  4. Pour in the chicken broth and heavy cream. Stir to combine, then add Italian seasoning, salt, and pepper. Let it simmer for 2-3 minutes to thicken slightly.
  5. Add the cooked sausage back into the skillet, then stir in the pasta. Add reserved pasta water if the sauce is too thick. Sprinkle in grated Parmesan cheese and stir until melted and incorporated. Adjust seasoning as necessary.
  6. Garnish with fresh parsley before serving.
