- 12 ounces fettuccine or spaghetti
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- Juice and zest of 1 large lemon
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions. Drain and reserve 1 cup of pasta water.
- Season chicken with salt and pepper. Heat olive oil in a skillet and cook chicken for 6-7 minutes per side, or until fully cooked. Remove from skillet and let rest.
- In the same skillet, sauté minced garlic for 1 minute. Add chicken broth, scraping up brown bits from the skillet. Add cream, lemon juice, and zest, and let simmer for 5 minutes.
- Cut the chicken into bite-sized pieces. Add pasta and chicken into the skillet. Toss to coat in the sauce. Gradually add reserved pasta water if the sauce is too thick.
- Mix in grated Parmesan, season with salt and pepper, and stir until the sauce is creamy and smooth. Garnish with fresh parsley and serve hot.
