A rich and creamy lobster bisque that captures the essence of the sea.
Ingredients

- 2 lobsters, cooked and chopped
- 4 cups lobster stock
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1/4 cup brandy
- 2 tablespoons tomato paste
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add onion, carrots, celery, and garlic. Sauté until soft.
- Stir in tomato paste and cook for 2 minutes.
- Add brandy and lobster stock. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add chopped lobster and heavy cream. Stir well.
- Season with salt and pepper. Heat through.
- Blend until smooth if desired. Serve hot.
Notes
- Use fresh lobster for the best flavor.
- Adjust cream quantity for desired thickness.
- Can be garnished with chopped chives or parsley.
