- 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
- 8 oz (225 g) fresh mushrooms (cremini or button)
- 4 cloves garlic (minced)
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) grated Parmesan cheese
- 1 cup (240 ml) chicken broth
- 2 tablespoons olive oil
- Salt and black pepper (to taste)
- Fresh herbs (such as parsley or thyme, for garnish)
Instructions
- Pat the chicken breasts dry and season both sides with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add sliced mushrooms and cook for 5-6 minutes until caramelized.
- Add minced garlic to the mushrooms and cook for an additional 1-2 minutes until fragrant.
- Pour in chicken broth and bring to a simmer, allowing it to reduce for 3-4 minutes.
- Lower the heat and stir in heavy cream and grated Parmesan cheese until melted and creamy. Season with additional salt and pepper if needed.
- Return the chicken to the skillet and spoon the sauce over it. Let simmer for 2-3 minutes to heat through.
- Serve warm, garnished with fresh herbs, alongside pasta, rice, or salad.

- For a thicker sauce, let it simmer longer before adding the chicken back in.
