Description

Creamy Parmesan Rotini with Cajun Chicken is a delicious and satisfying meal that combines rich flavors of creamy Parmesan sauce with the spicy kick of Cajun seasoning.


Ingredients

  • Rotini pasta: 12 oz (about 340 g)
  • Chicken breast: 1 lb (about 450 g), boneless and skinless
  • Cajun seasoning: 2 tablespoons
  • Garlic: 4 cloves, minced
  • Butter: 4 tablespoons (1/2 stick)
  • Heavy cream: 1 cup (about 240 ml)
  • Parmesan cheese: 1 cup, grated
  • Fresh parsley: 1/4 cup, chopped (for garnish)
  • Salt: to taste
  • Black pepper: to taste
  • Olive oil: 1 tablespoon (for cooking)

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and reserve 1/2 cup of pasta water.
  2. Season the chicken breasts with Cajun seasoning, salt, and black pepper.
  3. In a skillet, heat olive oil over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
  4. In the same skillet, reduce heat to medium, add butter and minced garlic, sauté for 30 seconds, then add heavy cream and simmer for 2-3 minutes. Stir in Parmesan cheese until melted.
  5. Add the cooked rotini and sliced chicken to the sauce, toss to combine, and heat through for 2-3 minutes.
  6. Serve immediately, garnished with chopped parsley.
