Ingredients
- Rotini pasta: 12 oz (about 340 g)
- Chicken breast: 1 lb (about 450 g), boneless and skinless
- Cajun seasoning: 2 tablespoons
- Garlic: 4 cloves, minced
- Butter: 4 tablespoons (1/2 stick)
- Heavy cream: 1 cup (about 240 ml)
- Parmesan cheese: 1 cup, grated
- Fresh parsley: 1/4 cup, chopped (for garnish)
- Salt: to taste
- Black pepper: to taste
- Olive oil: 1 tablespoon (for cooking)
Instructions
- Cook the rotini pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and reserve 1/2 cup of pasta water.
- Season the chicken breasts with Cajun seasoning, salt, and black pepper.
- In a skillet, heat olive oil over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
- In the same skillet, reduce heat to medium, add butter and minced garlic, sauté for 30 seconds, then add heavy cream and simmer for 2-3 minutes. Stir in Parmesan cheese until melted.
- Add the cooked rotini and sliced chicken to the sauce, toss to combine, and heat through for 2-3 minutes.
- Serve immediately, garnished with chopped parsley.
