Description

A delightful dish featuring tender chicken breasts in a luscious creamy pesto sauce with juicy grape tomatoes.


Ingredients

  • 2 boneless skinless chicken breasts (about 1.3 lb total)
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 2 Tbsp olive oil (divided)
  • 2 cloves garlic (minced)
  • 1 pint grape tomatoes (sliced in half)
  • 1/2 cup heavy cream
  • 1/4 cup pesto

Instructions

  1. Prepare the chicken by filleting or pounding to an even thickness, then season with salt and pepper.
  2. Cook the chicken in a heated skillet with 1 tablespoon of olive oil for 7-10 minutes until golden brown and fully cooked.
  3. Remove the chicken and sauté minced garlic and grape tomatoes in the skillet with the remaining olive oil for about 5 minutes.
  4. Create the creamy sauce by adding heavy cream and pesto to the skillet, stirring to combine. Return the chicken to the skillet and simmer for a few minutes.

Notes
