- 2 boneless skinless chicken breasts (about 1.3 lb total)
- 1/8 tsp salt
- 1/8 tsp pepper
- 2 Tbsp olive oil (divided)
- 2 cloves garlic (minced)
- 1 pint grape tomatoes (sliced in half)
- 1/2 cup heavy cream
- 1/4 cup pesto
Instructions
- Prepare the chicken by filleting or pounding to an even thickness, then season with salt and pepper.
- Cook the chicken in a heated skillet with 1 tablespoon of olive oil for 7-10 minutes until golden brown and fully cooked.
- Remove the chicken and sauté minced garlic and grape tomatoes in the skillet with the remaining olive oil for about 5 minutes.
- Create the creamy sauce by adding heavy cream and pesto to the skillet, stirring to combine. Return the chicken to the skillet and simmer for a few minutes.
Notes
Serve with pasta, rice, or a side of veggies. Garnish with fresh basil or Parmesan cheese for extra flavor.
