Description

Creamy Ricotta Chicken Pasta is a comforting and delicious dish featuring tender chicken pieces and pasta coated in a smooth ricotta sauce, perfect for family meals.


Ingredients

  • 500 grams boneless skinless chicken breasts, cut into bite-sized pieces
  • 250 grams whole milk ricotta cheese
  • 300 grams pasta (fettuccine or penne)
  • 2 cloves minced garlic
  • 2 tablespoons extra virgin olive oil
  • 10 leaves fresh basil or parsley, chopped finely
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper. Cook chicken until golden and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  4. Add ricotta cheese and reserved pasta water to the skillet. Whisk until smooth and creamy. Adjust consistency with more pasta water if needed. Season with salt and pepper to taste.
  5. Return chicken to the skillet and add drained pasta. Toss everything together until well coated with the creamy sauce.
  6. Serve immediately, garnished with chopped fresh basil or parsley.
