A rich and hearty creamy sausage tortellini soup that warms you up.
Ingredients

- 1 pound Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 package cheese tortellini (9 ounces)
- 2 cups spinach
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- In a large pot, cook the sausage over medium heat until browned.
- Add the onion and garlic, cooking until the onion is translucent.
- Pour in the chicken broth and bring to a boil.
- Stir in the tortellini and cook according to package instructions.
- Add the heavy cream and spinach, simmer for 5 minutes.
- Season with salt and pepper.
- Serve hot, topped with Parmesan cheese.
Notes
- This soup can be made in advance and reheated.
- Feel free to add other vegetables like carrots or mushrooms.
- Adjust the cream for desired richness.
