- 12 oz (340 g) pasta (fettuccine or penne works great)
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Boil salted water and cook pasta according to package instructions until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Sauté garlic for 1-2 minutes until fragrant, being careful not to burn it.
- Add chopped sun-dried tomatoes and cook for another 2-3 minutes to combine the flavors.
- Reduce heat to low, add heavy cream, and stir well. Add Parmesan cheese and Italian seasoning, stirring until combined and creamy. Add reserved pasta water if the sauce is too thick.
- Mix the cooked pasta into the skillet, toss to coat in the creamy sauce, and season with salt and pepper to taste. Garnish with extra cheese or basil if desired.

- For a lighter version, substitute heavy cream with half-and-half or coconut cream.
- Gluten-free or whole wheat pasta can be used for an alternative.
- If you prefer fresh tomatoes, cherry tomatoes can be used instead of sun-dried, though the flavor will differ.
