Ingredients

  • 12 oz penne pasta
  • 1 lb Italian sausage
  • 2 cups spinach
  • 1 cup sun-dried tomatoes
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the penne pasta according to package instructions. Drain and set aside.
  3. In a large skillet, cook the Italian sausage over medium heat until browned.
  4. Add the garlic, sun-dried tomatoes, and spinach to the skillet. Cook until spinach wilts.
  5. Stir in the heavy cream, Italian seasoning, salt, and pepper. Cook until heated through.
  6. Combine the cooked pasta with the sausage mixture in a large bowl.
  7. Add half of the Parmesan cheese and mix well.
  8. Transfer the mixture to a baking dish and top with remaining Parmesan and mozzarella cheese.
  9. Bake for 25-30 minutes until bubbly and golden.
  10. Let it cool for a few minutes before serving.
