Description

Crispy Ginger Beef Stir-Fry is a vibrant and flavorful dish made with crispy fried flank steak, colorful vegetables, and a bold ginger-garlic sauce. It’s a perfect balance of sweet, savory, and spicy flavors, ideal for weeknight dinners or entertaining guests.

  • 3/4 cup cornstarch
  • 1/2 cup water
  • 2 large eggs
  • 1 pound flank steak, cut into thin strips
  • 1/2 cup canola oil (or as needed)
  • 1 large carrot, cut into matchstick-sized pieces
  • 1 green bell pepper, cut into matchstick-sized pieces
  • 1 red bell pepper, cut into matchstick-sized pieces
  • 3 green onions, chopped
  • 1/4 cup minced fresh ginger root
  • 5 garlic cloves, minced
  • 1/2 cup white sugar
  • 1/4 cup rice vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon red pepper flakes (or to taste)

Instructions

  1. In a large bowl, whisk together cornstarch and water until smooth. Add eggs and whisk to combine.
  2. Toss thinly sliced flank steak in the cornstarch mixture until well-coated.
  3. Heat canola oil in a large wok or skillet over high heat until hot. Fry the beef in batches for about 3 minutes, until golden and crispy. Drain on paper towels.
  4. Pour off excess oil, leaving about 1 tablespoon in the wok. Add carrots, bell peppers, green onions, ginger, and garlic. Stir-fry over high heat for 3 minutes.
  5. In a small bowl, whisk together sugar, rice vinegar, soy sauce, sesame oil, and red pepper flakes. Pour sauce over vegetables and bring to a boil.
  6. Add the crispy beef back into the wok and stir to combine. Cook for an additional 3 minutes until everything is heated through.
  7. Serve hot over rice or noodles and enjoy!
