- 3/4 cup cornstarch
- 1/2 cup water
- 2 large eggs
- 1 pound flank steak, cut into thin strips
- 1/2 cup canola oil (or as needed)
- 1 large carrot, cut into matchstick-sized pieces
- 1 green bell pepper, cut into matchstick-sized pieces
- 1 red bell pepper, cut into matchstick-sized pieces
- 3 green onions, chopped
- 1/4 cup minced fresh ginger root
- 5 garlic cloves, minced
- 1/2 cup white sugar
- 1/4 cup rice vinegar
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon red pepper flakes (or to taste)
Instructions
- In a large bowl, whisk together cornstarch and water until smooth. Add eggs and whisk to combine.
- Toss thinly sliced flank steak in the cornstarch mixture until well-coated.
- Heat canola oil in a large wok or skillet over high heat until hot. Fry the beef in batches for about 3 minutes, until golden and crispy. Drain on paper towels.
- Pour off excess oil, leaving about 1 tablespoon in the wok. Add carrots, bell peppers, green onions, ginger, and garlic. Stir-fry over high heat for 3 minutes.
- In a small bowl, whisk together sugar, rice vinegar, soy sauce, sesame oil, and red pepper flakes. Pour sauce over vegetables and bring to a boil.
- Add the crispy beef back into the wok and stir to combine. Cook for an additional 3 minutes until everything is heated through.
- Serve hot over rice or noodles and enjoy!
