- 2 chicken breasts, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt

- 1 large egg, beaten
- Oil for frying
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon hoisin sauce
- 2 tablespoons ketchup
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- 1/2 teaspoon chili flakes (optional)
- 3 cups cooked and cooled rice (preferably leftover rice)
- 1 cup mixed vegetables (carrots, corn, green beans)
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 eggs, lightly beaten
- 2 green onions, sliced
- 1 tablespoon vegetable oil
- Sesame seeds for garnish
- Sliced green onions for garnish
Instructions
- In a bowl, mix flour, cornstarch, garlic powder, paprika, salt, and pepper. In another bowl, beat the egg.
- Dip chicken pieces into egg, then dredge in the flour mixture until fully coated.
- Heat oil in a deep pan over medium-high heat and fry chicken pieces in batches until golden and crispy, about 4–5 minutes. Drain on paper towels.
- In a saucepan, mix soy sauce, honey, hoisin sauce, ketchup, garlic, ginger, and chili flakes. Simmer until bubbling.
- Add cornstarch slurry and stir until the sauce thickens. Toss the fried chicken in the sauce until coated.
- In a large skillet or wok, heat vegetable oil. Sauté mixed vegetables for 2–3 minutes until tender.
- Push vegetables to one side and scramble the eggs on the other side of the skillet until cooked.
- Add cooked rice to the skillet. Mix with eggs and vegetables. Drizzle with soy sauce and sesame oil, and stir to combine. Cook for 2–3 more minutes.
- Stir in green onions and remove from heat.
- Serve the fried rice alongside or under the saucy chicken. Garnish with sesame seeds and green onions.
Notes
- Use day-old rice for better texture in fried rice.
- Fry chicken in batches to keep it crispy.
- Adjust spice level by adding more or less chili flakes.
- To make it vegetarian, substitute tofu for chicken.
- You can bake the chicken for a lower-fat version.
