Description

Crispy Saucy Chicken with Vegetable Fried Rice is a delicious Asian-inspired dish featuring golden fried chicken tossed in a sweet and savory sauce, served with fluffy stir-fried rice loaded with colorful vegetables.

  • 2 chicken breasts, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg, beaten
  • Oil for frying
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon hoisin sauce
  • 2 tablespoons ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1/2 teaspoon chili flakes (optional)
  • 3 cups cooked and cooled rice (preferably leftover rice)
  • 1 cup mixed vegetables (carrots, corn, green beans)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 eggs, lightly beaten
  • 2 green onions, sliced
  • 1 tablespoon vegetable oil
  • Sesame seeds for garnish
  • Sliced green onions for garnish

Instructions

  1. In a bowl, mix flour, cornstarch, garlic powder, paprika, salt, and pepper. In another bowl, beat the egg.
  2. Dip chicken pieces into egg, then dredge in the flour mixture until fully coated.
  3. Heat oil in a deep pan over medium-high heat and fry chicken pieces in batches until golden and crispy, about 4–5 minutes. Drain on paper towels.
  4. In a saucepan, mix soy sauce, honey, hoisin sauce, ketchup, garlic, ginger, and chili flakes. Simmer until bubbling.
  5. Add cornstarch slurry and stir until the sauce thickens. Toss the fried chicken in the sauce until coated.
  6. In a large skillet or wok, heat vegetable oil. Sauté mixed vegetables for 2–3 minutes until tender.
  7. Push vegetables to one side and scramble the eggs on the other side of the skillet until cooked.
  8. Add cooked rice to the skillet. Mix with eggs and vegetables. Drizzle with soy sauce and sesame oil, and stir to combine. Cook for 2–3 more minutes.
  9. Stir in green onions and remove from heat.
  10. Serve the fried rice alongside or under the saucy chicken. Garnish with sesame seeds and green onions.

Notes

  • Use day-old rice for better texture in fried rice.
  • Fry chicken in batches to keep it crispy.
  • Adjust spice level by adding more or less chili flakes.
  • To make it vegetarian, substitute tofu for chicken.
  • You can bake the chicken for a lower-fat version.
