  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, chopped
  • 3 cups egg noodles
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup heavy cream or a can of cream of chicken soup (optional)
  • Chopped parsley for garnish

Instructions

  1. Place chicken breasts at the bottom of the Crock Pot.
  2. Add sliced carrots, celery, and chopped onion over the chicken.
  3. Pour in chicken broth and sprinkle garlic powder, onion powder, dried thyme, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken and shred using two forks.
  6. Return shredded chicken to the Crock Pot and add egg noodles; stir gently.
  7. Cover and cook on high for an additional 30 minutes until noodles are tender.
  8. Serve hot, garnished with chopped parsley.

Notes

  • Optional: sauté onions and vegetables before adding to enhance flavor.
  • Use chicken thighs or rotisserie chicken as substitutes.
  • Vegetable broth can replace chicken broth for vegetarian option.
  • Omit cream or cream soup for a lighter version.
  • Freeze chicken and broth without noodles to avoid mushy texture; add fresh noodles when reheating.
  • Store leftovers in airtight containers and refrigerate up to 4 days.
  • Reheat gently on stove adding broth or water if soup is too thick.
