Instructions
- Preheat the oven to 375°F (190°C) and grease a 9-inch pie dish or quiche pan.
- Sauté diced onion and minced garlic in olive oil for 2-3 minutes until translucent, then add diced bell peppers and chopped spinach, cooking for an additional 3-4 minutes.
- In a large mixing bowl, whisk together eggs and milk, then stir in salt, black pepper, and oregano.
- Add the sautéed vegetables and shredded cheese to the egg mixture and stir gently.
- Pour the mixture into the prepared pie dish, spreading it evenly.
- Bake for 30-35 minutes until the center is set and the top is lightly golden.
- Let cool for 5-10 minutes before slicing and serving.
