Description
A refreshing cucumber dill yogurt salad that is light and healthy.
Ingredients
Scale
- 2 cups cucumber, diced
- 1 cup plain yogurt
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a bowl, combine diced cucumber and salt. Let it sit for 10 minutes to release excess water.
- In another bowl, mix yogurt, dill, lemon juice, and garlic.
- Drain the cucumber and add it to the yogurt mixture.
- Stir well to combine all ingredients.
- Season with pepper to taste.
- Refrigerate for 30 minutes before serving.
Notes
- Serve chilled.
- Can be made a day ahead for better flavor.
- Use Greek yogurt for a thicker consistency.
