Description

Date Nut Energy Bites are delicious, bite-sized snacks made primarily from Medjool dates and mixed nuts, packed with natural sweetness and healthy fats.


Ingredients

  • 1 cup Medjool dates, pitted (about 1012 dates)
  • 1 cup mixed nuts (such as almonds, walnuts, and cashews)
  • 1/2 cup rolled oats
  • 1/4 cup unsweetened shredded coconut (plus extra for rolling)
  • 2 tablespoons nut butter (such as almond or peanut butter)
  • 1 tablespoon honey or maple syrup (optional, for added sweetness)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Gather your ingredients.
  2. Prepare the nuts and dates by soaking the dates if firm and chopping the nuts.
  3. Blend the mixture of dates, oats, coconut, nut butter, honey or maple syrup, vanilla extract, and salt until sticky.
  4. Form the mixture into small balls, about 1 tablespoon each.
  5. Chill the bites in the refrigerator for at least 30 minutes before enjoying or storing.

Notes
