Date Nut Energy Bites are delicious, bite-sized snacks made primarily from Medjool dates and mixed nuts, packed with natural sweetness and healthy fats.

- 1 cup Medjool dates, pitted (about 10–12 dates)
- 1 cup mixed nuts (such as almonds, walnuts, and cashews)
- 1/2 cup rolled oats
- 1/4 cup unsweetened shredded coconut (plus extra for rolling)
- 2 tablespoons nut butter (such as almond or peanut butter)
- 1 tablespoon honey or maple syrup (optional, for added sweetness)
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions
- Gather your ingredients.
- Prepare the nuts and dates by soaking the dates if firm and chopping the nuts.
- Blend the mixture of dates, oats, coconut, nut butter, honey or maple syrup, vanilla extract, and salt until sticky.
- Form the mixture into small balls, about 1 tablespoon each.
- Chill the bites in the refrigerator for at least 30 minutes before enjoying or storing.
Notes
- Store in an airtight container in the fridge for up to one week.
- Can be frozen for up to three months.
- Experiment with different nuts and add-ins like chocolate chips or extra coconut.
