Description

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 2 cups shredded cheddar cheese
  • 1 bag (9 oz) Nacho Cheese Doritos, crushed
  • 1 packet taco seasoning
  • ½ cup sour cream (optional)
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat and brown the ground beef, breaking it apart with a spoon. Cook for 5-7 minutes, then drain any excess fat.
  2. Sprinkle the taco seasoning over the cooked beef, mixing well and cooking for another 2-3 minutes to absorb the flavor.
  3. In a large mixing bowl, combine the browned ground beef, black beans, cream of chicken soup, and diced tomatoes. Stir well until fully combined.
  4. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and spread half of the crushed Doritos on the bottom.
  5. Spoon half of the meat mixture over the Doritos and sprinkle with one cup of shredded cheddar cheese. Repeat the layers with the remaining Doritos, meat mixture, and cheese.
  6. Cover with foil and bake for 25 minutes. Remove the foil for the last 10 minutes to let the cheese bubble and brown slightly. Allow the casserole to sit for 5-10 minutes before serving.
