Description
Easy Chicken Paprikash Over Buttered Egg Noodles is a hearty and comforting Hungarian-inspired dish that features tender chicken simmered in a rich paprika-spiced sauce, finished with creamy sour cream, and served over buttery egg noodles. Perfect for family dinners or gatherings with friends, this recipe is both satisfying and simple to prepare.
Ingredients
Scale
- 2.5 pounds boneless chicken breasts and thighs, diced
- 2 teaspoons kosher salt, divided
- 3 tablespoons all-purpose flour, divided
- 4 tablespoons unsalted butter, divided
- 1 medium onion, chopped
- 3 tablespoons Hungarian sweet paprika
- 1/2 teaspoon ground black pepper
- 1.5 cups chicken stock
- 1.5 ounces egg noodles (1 package)
- 2 tablespoons salted butter
- 1 cup sour cream
Instructions
- Season the diced chicken with 1 teaspoon of kosher salt and black pepper. Toss in 2 tablespoons of flour to coat and set aside.
- In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Sauté the chopped onion for about 10 minutes until soft and translucent.
- Add the flour-coated chicken to the skillet and cook for about 5 minutes until browned on all sides, stirring frequently.
- Deglaze the skillet with half of the chicken stock, scraping the browned bits from the bottom. Add the remaining stock, paprika, and 1 teaspoon salt. Cover and simmer on medium-low for 25 minutes.
- While the chicken simmers, cook the egg noodles according to package instructions. Reserve 1/4 cup of the cooking water. Drain and return noodles to the pot, then toss with 2 tablespoons salted butter and reserved water over low heat until coated.
- Remove chicken from the skillet. In a bowl, whisk 1 tablespoon flour into the sour cream until smooth. Gradually whisk in 1/2 cup of the hot cooking liquid from the skillet.
- Return the sour cream mixture to the skillet and stir to combine. Add the chicken back and simmer on low, uncovered, for about 5 minutes until thickened. Do not boil. Adjust seasoning to taste.
- Serve the creamy chicken paprikash over the buttered noodles. Garnish with extra paprika or sour cream if desired.
Notes
- Use authentic Hungarian paprika for the best flavor.
- Do not boil the sauce after adding sour cream to avoid curdling.
- Use Greek yogurt instead of sour cream for a lighter version.
- Separate leftovers into chicken and noodles before refrigerating to maintain texture.
- Add vegetables like bell peppers or mushrooms for extra flavor and nutrition.
