- 3 tablespoons salted butter
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 tablespoon tomato paste
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon mustard powder
- 3/4 cup chicken broth
- 1 1/2 cups half and half
- 10 oz Rotel tomatoes with green chilies, juices reserved
- 3 tablespoons cream cheese, softened
- 1/3 cup Parmesan cheese, grated
- 20 oz refrigerated ravioli
- 1 pinch red pepper flakes (optional)
Instructions
- Measure out all ingredients and prepare tools including a high-walled skillet and stirring utensil.
- Melt butter over medium-low heat. Add garlic and stir for 2 minutes until fragrant.
- Add flour, cook for 2 minutes while stirring. Stir in tomato paste, onion powder, basil, oregano, and mustard powder until blended.
- Gradually add chicken broth while stirring, then add half and half. Bring to a boil, then reduce to a simmer.
- Add softened cream cheese and drained Rotel tomatoes. Stir until smooth and well blended.
- Cook ravioli according to package instructions. Drain and set aside.
- Reduce sauce heat to low, stir in Parmesan cheese until melted. Add red pepper flakes if using. Fold in cooked ravioli and coat well. Thin with reserved tomato juice if needed.
- Serve immediately, garnished with extra Parmesan or fresh herbs if desired.
