Description

A hearty Egyptian beef stew with spices and vegetables.


Ingredients

  • 2 lbs beef, cut into cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • 4 cups beef broth
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Add onion and garlic, sauté until softened.
  4. Stir in carrots, potatoes, and bell pepper.
  5. Add diced tomatoes, tomato paste, cumin, paprika, coriander, salt, and pepper.
  6. Pour in beef broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 1.5 to 2 hours.
  8. Serve hot, garnished with fresh parsley.

Notes
