Description
A refreshing pasta salad with feta cheese and cranberries.
Ingredients

- 8 oz rigatoni pasta
- 1 cup feta cheese, crumbled
- 1/2 cup dried cranberries
- 1/4 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook rigatoni according to package instructions. Drain and cool.
- In a large bowl, combine the cooled pasta, feta, cranberries, red onion, and cherry tomatoes.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like cucumbers or bell peppers.
- This salad can be made a day ahead for better flavor.
