- 1 lb white fish fillets
- 1 tsp chili powder
- 1 tsp cumin
- 1 tbsp olive oil
- 2 cups cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 avocado, diced
- 1 cup diced tomatoes
- 1/2 cup chopped cilantro
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Season fish with chili powder, cumin, salt, and pepper.
- Heat olive oil in a pan over medium heat.
- Cook fish for 3-4 minutes per side until cooked through.
- Remove fish and flake with a fork.
- In bowls, layer rice, black beans, corn, and fish.
- Add avocado, tomatoes, and cilantro on top.
- Drizzle lime juice over the bowls before serving.
