Description

French Onion Pasta is a creamy, cheesy fusion of pasta and classic French onion soup, perfect for cozy dinners or entertaining.

  • 3 large yellow onions, sliced into 1/8-inch rings
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 garlic cloves, minced
  • Pinch to 1/4 teaspoon red pepper flakes
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon reduced sodium soy sauce
  • 5 1/2 cups water
  • 1 can (12 ounces) evaporated milk
  • 1/2 tablespoon cornstarch
  • 2 tablespoons beef bouillon
  • 1 tablespoon fresh parsley, minced
  • 2 teaspoons fresh thyme, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 pound short cut pasta
  • 5 ounces freshly shredded Gruyere cheese
  • 1/4 cup freshly shredded Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil and butter in a large Dutch oven over medium heat. Add sliced onions, salt, and pepper, and cook for 30–35 minutes until deeply caramelized.
  2. Add garlic, red pepper flakes, Worcestershire sauce, and soy sauce. Stir and cook for 30 seconds until aromatic.
  3. Pour in water and half the evaporated milk. In a bowl, whisk remaining milk with cornstarch and stir into the pot. Add bouillon, parsley, thyme, oregano, and paprika. Bring to a boil.
  4. Add pasta, reduce heat to a simmer, and cook for 20–25 minutes until al dente, stirring frequently. Some liquid should remain for the sauce.
  5. Remove from heat and stir in Gruyere and Parmesan cheese in batches until melted. Adjust seasoning and garnish with parsley before serving.

Notes

  • Caramelizing onions thoroughly enhances the dish’s flavor—don’t rush this step.
  • Add a splash of wine after garlic for extra depth, if desired.
  • Substitute beef bouillon with vegetable for a vegetarian version.
  • Adjust cheese quantity based on desired creaminess.
  • Not ideal for freezing due to cheese texture, but can be done with care.
