French Onion Pasta is a creamy, cheesy fusion of pasta and classic French onion soup, perfect for cozy dinners or entertaining.

- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 large yellow onions, sliced into 1/8-inch rings
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 4 garlic cloves, minced
- Pinch to 1/4 teaspoon red pepper flakes
- 1 tablespoon Worcestershire sauce
- 1 tablespoon reduced sodium soy sauce
- 5 1/2 cups water
- 1 can (12 ounces) evaporated milk
- 1/2 tablespoon cornstarch
- 2 tablespoons beef bouillon
- 1 tablespoon fresh parsley, minced
- 2 teaspoons fresh thyme, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 pound short cut pasta
- 5 ounces freshly shredded Gruyere cheese
- 1/4 cup freshly shredded Parmesan cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil and butter in a large Dutch oven over medium heat. Add sliced onions, salt, and pepper, and cook for 30–35 minutes until deeply caramelized.
- Add garlic, red pepper flakes, Worcestershire sauce, and soy sauce. Stir and cook for 30 seconds until aromatic.
- Pour in water and half the evaporated milk. In a bowl, whisk remaining milk with cornstarch and stir into the pot. Add bouillon, parsley, thyme, oregano, and paprika. Bring to a boil.
- Add pasta, reduce heat to a simmer, and cook for 20–25 minutes until al dente, stirring frequently. Some liquid should remain for the sauce.
- Remove from heat and stir in Gruyere and Parmesan cheese in batches until melted. Adjust seasoning and garnish with parsley before serving.
Notes
- Caramelizing onions thoroughly enhances the dish’s flavor—don’t rush this step.
- Add a splash of wine after garlic for extra depth, if desired.
- Substitute beef bouillon with vegetable for a vegetarian version.
- Adjust cheese quantity based on desired creaminess.
- Not ideal for freezing due to cheese texture, but can be done with care.
