Ingredients

- 1 cup orzo
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- 2 cups vegetable broth
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Add sliced mushrooms and cook until soft.
- Stir in the orzo and cook for 1-2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 10-12 minutes.
- Stir in the spinach until wilted.
- Season with salt and pepper.
- Serve warm.

- Can substitute vegetable broth with chicken broth.
- Add grated cheese for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
