- 8 oz pasta (spaghetti, fettuccine, or your choice)
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 1 cup chicken broth
- ½ cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Cook pasta in salted water according to package instructions, reserving 1 cup pasta water. Drain and set aside.
- Heat olive oil in a skillet, season chicken with salt and pepper, and cook for 5-7 minutes per side until golden and cooked through. Let the chicken rest, then slice into bite-sized pieces.
- In the same skillet, sauté garlic for 1 minute, then add chicken broth and deglaze the pan.
- Stir in heavy cream and half of the Parmesan cheese. Simmer for 2-3 minutes to thicken the sauce.
- Add cooked pasta and sliced chicken, toss to combine, and adjust the sauce consistency with reserved pasta water if needed.
- Serve with remaining Parmesan cheese and garnish with parsley.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Freshly grated Parmesan works best for flavor.
- Don’t forget to reserve pasta water to help thicken the sauce.
