Ingredients

  • 2 chicken breasts
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season chicken breasts with olive oil, lemon juice, oregano, salt, and pepper.
  3. Grill chicken for 6-7 minutes on each side or until fully cooked.
  4. Remove chicken from grill and let it rest for 5 minutes.
  5. While chicken rests, prepare the quinoa and chop vegetables.
  6. Slice the grilled chicken into strips.
  7. In a bowl, layer quinoa, tomatoes, cucumber, red onion, feta, and olives.
  8. Top with sliced chicken and drizzle with extra olive oil and lemon juice if desired.

Notes

  • Can substitute quinoa with brown rice.
  • Use grilled vegetables for added flavor.
