Ingredients

- 2 chicken breasts
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Season chicken breasts with olive oil, lemon juice, oregano, salt, and pepper.
- Grill chicken for 6-7 minutes on each side or until fully cooked.
- Remove chicken from grill and let it rest for 5 minutes.
- While chicken rests, prepare the quinoa and chop vegetables.
- Slice the grilled chicken into strips.
- In a bowl, layer quinoa, tomatoes, cucumber, red onion, feta, and olives.
- Top with sliced chicken and drizzle with extra olive oil and lemon juice if desired.
Notes
- Can substitute quinoa with brown rice.
- Use grilled vegetables for added flavor.
- Adjust the amount of feta based on preference.
