- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine diced potatoes, olive oil, salt, pepper, and oregano.
- Toss to coat the potatoes evenly.
- Spread the potatoes on a baking sheet in a single layer.
- Roast for 30-35 minutes or until golden brown and crispy.
- Remove from oven and sprinkle with feta cheese and parsley.
- Serve hot.
