Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 1/2 cup chicken or vegetable broth
  • Juice of 2 lemons
  • 2 teaspoons dried oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes in halves or quarters.
  3. In a large bowl, mix olive oil, broth, lemon juice, oregano, salt, and pepper.
