Ingredients

- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1/2 cup chicken or vegetable broth
- Juice of 2 lemons
- 2 teaspoons dried oregano
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut the potatoes in halves or quarters.
- In a large bowl, mix olive oil, broth, lemon juice, oregano, salt, and pepper.
- Add the potatoes to the bowl and toss to coat.
- Transfer the potatoes to a baking dish and pour any remaining liquid over them.
- Bake for 45 minutes, stirring halfway through, until golden and tender.
- Serve warm and enjoy!
