Description

A refreshing and zesty rice dish flavored with lemon and herbs.


Ingredients

  • 1 cup of long-grain rice
  • 2 cups of vegetable broth
  • 1 lemon (juiced and zested)
  • 2 tablespoons of olive oil
  • 1/4 cup of fresh parsley (chopped)
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

  1. Rinse the rice under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add the rice and toast for 2-3 minutes.
  4. Pour in the vegetable broth, lemon juice, and zest.
  5. Season with salt and pepper. Stir well.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 15-20 minutes until rice is tender.
  8. Remove from heat and let it sit covered for 5 minutes.
  9. Fluff with a fork and stir in chopped parsley.
