Description
A refreshing and zesty rice dish flavored with lemon and herbs.
Ingredients
Scale
- 1 cup of long-grain rice
- 2 cups of vegetable broth
- 1 lemon (juiced and zested)
- 2 tablespoons of olive oil
- 1/4 cup of fresh parsley (chopped)
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Rinse the rice under cold water.
- In a pot, heat olive oil over medium heat.
- Add the rice and toast for 2-3 minutes.
- Pour in the vegetable broth, lemon juice, and zest.
- Season with salt and pepper. Stir well.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 15-20 minutes until rice is tender.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff with a fork and stir in chopped parsley.
Notes
- Adjust lemon juice to taste.
- Pair with grilled vegetables or fish.
